A piece of the pie
[attach]261[/attach]The Pie Shack is a little old place where we can get together.
Co-owner Tim McConvey says the joy of opening up a new business has outweighed many of the hardships, like running it with a staff of three.
“We’ve been squeezing in about a week’s worth of work into one day, so far,” says McConvey.
But the pace has been good for business at the Glen Manor Dr. and Queen St. East bakery.
“It’s been very fortunate for demand to be this high,” he says.
However, he can’t take credit for all of the Pie Shack’s creations.
After working in business for 20 years, McConvey decided to hang up his suit and tie and share his desire for running his own business with his neighbours, Erez and Keren Hadad — pie bakers.
“I’ve had access to wonderful people,” McConvey says of the Hadads. “It’s like Canada meets Europe.”
That rustic, just-out-of-the-oven freshness is what sets the business apart from competitors, he says.
“Leaving downtown helped me see that people wanted the basics again, like a piece of pie and coffee,” says McConvey.
The Pie Shack isn’t just for sweets, though. There is also food for those with a savoury tooth — steak, mushroom and ale, and pork and caramelized onions. Sometimes it’s so busy, McConvey says it’s been difficult to fill orders.
“I quadrupled my order in the first week and it still wasn’t enough,” he says. “Today is peach, tomorrow can be blueberry.”
